Dijon Chicken with Corn Salsa

Let's face it, chicken gets boring. Here is an EASY, and healthy twist to your everyday chicken.

Ingredients:
4 Chicken Breasts (fresh or thawed)
1 cup Dijon Mustard
Garlic Salt
1 can Corn
1 green pepper (chopped)
2 Roma Tomatoes (chopped)
1 tablespoon cilantro
1 tablespoon red wine vinegar
1 tablespoon orange juice

Directions:
Cover the chicken in dijon mustard. You don't need to marinate it, just make sure it is covered.
Broil the chicken in the oven at 500. You can also throw these on the grill, whichever you prefer. Turn continuously until cooked through.


Mix the corn, pepper, tomatoes, cilantro, vinegar, and orange juice together. Sprinkle with garlic salt to taste.

Serve the chicken with the salsa on top. Enjoy!!

I made these yesterday and they are fabulous, especially when served with your favorite ice cream. (as if you needed to add any more sugar or calories, but hey, I say go big or go home when it comes to dessert)

I love sun dried tomatoes! Oftentimes, I make my own, but to keep things easy, lets stay with the store bought kind. You can usually find these in the produce section. This recipe may sound a little complicated, but it is fairly easy and definitely delicious.

Bacon Drippings

While I'm on the subject of bacon (an ingredient in my last recipe), I thought I would share a few ideas of what to do with those bacon drippings. My husband forbids me to pour them down the sink, especially when warm. So here are my ideas, feel free to submit some of yours.

A Man's Salad

Most of the men I know think of a salad as a dainty women's meal that could never satisfy a man's appetite, even as a side dish. At a BBQ a few years ago, I experimented with a number of ingredients and created this simple but delicious salad that has cime to be known as the "Man's Salad" which I've yet to see any male turn their nose to. Although it may not be the most healthy salad, it is a fail safe for any BBQ.
