A few words …and a shrug along the way…
Bean Sprouts
… cultivated from green mung beans and water
… one of the easiest vegetable to grow – I remember experimenting with it; was good fun
… a common cooking ingredient in most Asian countries, and increasingly become more popular in other parts of the world
… it is unfortunately high in natural sugars but it is a good source of dietary fibre, protein, vitamin B6 and various minerals, and a very good source of vitamins C and K, folate, copper and manganese
… a common ingredient in rice paper rolls, with noodles or in a vegetarian stir-fry/side-dish
