I love it when mangoes are in season. The aromatic fragrance is enough to have you salivating as you impatiently peel and slice it. Though it can be fairly expensive, if you’re willing to put up with a few imperfect ones, you might be able to score a tray for a fairly low price at the markets.
So, what do you do with the few imperfect ones? Though generally too ripe to be enjoyed – if you prefer a bit more texture and firmness – there are numerous recipes you can try out. I like making a Mango Lassi because it’s fairly quick to make and simple too, and it's great for a quick snack or even breakfast.
Here’s my quick and simple version of a Mango Lassi.
What you need:
3 whole mangoes
1 pot of low-fat Greek-style yoghurt ~500ml
2 heaped teaspoons of good honey
a bit of hot water
some cool/cold water
What to do:
1…Peel and dice mangoes into a jug.
2…Melt honey with some hot water then top up to 1 cup with cool/cold water.
3…Add to jug. Add yoghurt. Blitz with a stick blender or in your blender for a few minutes – until desired consistency.
4…Serve chilled. Enjoy!
