Monday Mumbles
A few words …and a shrug along the way…
Lotus Root
... rich in dietary fiber, vitamin c, potassium, thiamine, riboflavin, vitamin B6, phosphorus, copper and manganese
... texture is slightly crunchy and it has a mild sweet taste
... typically used in soups, sometimes it’s pickled for use as a condiment
... sometimes it’s candied to serve during certain festivals
... great in a stir-fry too!
