Bacon Drippings

While I'm on the subject of bacon (an ingredient in my last recipe), I thought I would share a few ideas of what to do with those bacon drippings. My husband forbids me to pour them down the sink, especially when warm. So here are my ideas, feel free to submit some of yours.
Combine the drippings with BBQ sauce and use with your ribs or chicken. This creates a deliciously rich smokey flavor giving your meat something extra. .
Combine with sugar and apple cider vinegar to make a Bacon Vinaigrette. Start with about 1/4 c. sugar , add 1/2 c. vinegar and 1 Tbsp. bacon drippings or more. Depending on the bacon you cooked, it may take a little more of one of the ingredients to get the right consistency. I love this type of dressing which is especially great on a spinach salad with bacon, mushrooms, red onions, and craisins.
Make bacon croutons by tossing the drippings with old bread cubes. Once again, this is a great flavor on any salad. I'm sure by now you are already sensing my obsession with salad.
Brush corn on the cob with bacon drippings and grill to give it a smoky flavor. Who doesn't love grilled corn on the cob? To do this, soak the husks in water until ready to grill. Brush the corn with bacon drippings and add a little paprika. Lay the corn directly on the grill and turn every so often to make sure all sides are evenly grilled.
And always the fail safe, use your bacon drippings to make gravy.
