More Than Just Fluffy Goodness

Brown wild rice pearl-barley side-dish low-GI gluten-free lowfat

It might be a little understated, but when dressed, it sure is a knockout.

It can be such a delicious accompaniment that you can’t stop shovelling help but have seconds (or even thirds!).


It’s a staple in many countries – in so many different ways and with various vegetables, meat and even seafood. The best part though I think is the preparation.

It’s some sort of a quiet ritual – a therapy session if you like – where when you feel the grains against your hand, you quietly thank the farmers for their hard work and to Mother Nature for providing the harvest.

First, the measured task of having enough water to yield a nice fluffy pot. Then plug in your iPod and pour a glass of wine for the patient wait of the button going ‘CLICK! It’s done’.

It sure is more than just fluffy goodness…

Brown and Wild Rice with Barley for a nice healthy carb fix i.e pick-me-upper.

What you need:

1 cup brown rice
1/2 cup wild rice
1/2 cup pearl barley
*3 cups of vegetable stock
1/4 teaspoon salt
1 tablespoon olive oil

What to do:
1…Measure rice and barley and place into pot. Rinse 2-3 times in cold water.
2…Add the stock, oil and salt to pot, and stir to mix.
3…Hit the ‘cook’ button on your rice cooker – easy!
4…Serve as a vegetarian meal or with any kind of mains, fish or meat.

Serves 4

Note...
General guide is 1.5 cup of water for 1 cup brown rice – I've assumed wild rice and barley as *brown* based on its similar textures, and it turned out beautifully. Check your rice cooker booklet for specific instructions.

You've done this nicely Lara, and I love brown rice with a great stir fry, unfortunately it is not long before one feels hungry again, pity the poor people for whom it is subsistence.

The lovely nutty taste and texture of the wild rice goes very well with it.

Brown rice is low-GI so you should be burning it more slowly. I sometimes add some corn to it, just to bulk up the dish -- yummy indeed too!
