Beer plus Fish equals...

...very yummy fish!
Everyone loves a good serve of fish and chips. It’s always nice comfort food, especially when served with good chips. However, I sometimes find that the fish either lacks flavour or the batter is too thick. So, I decided to try my hand at it, after tweaking the standard recipe for beer battered fish. No chips here this time but a lovely healthy salad to go with it.
What you need:
6 white-fish fillets – flathead, whiting or any firm fish
187ml/half a bottle of beer
3 tablespoons of cornflour
4 tablespoons of plain flour
salt
chilli flakes – optional
oil for frying – I use Canola
lemon wedges – optional for when you serve
What to do:
1…Rinse the fillets and wipe dry. Salt and add chilli flakes as desired. Set aside.
2…The Batter:
Place the flour into a bowl. Salt slightly and add chilli flakes as desired. Slowly pour in the beer. Mixing it as you go otherwise it might get too lumpy. Add beer according to how you prefer your batter – less beer if you prefer a thickish batter, more if you prefer a light batter.
3…Place all fillets into batter and coat well. Heat oil in a deep pot – big and deep enough to fry the fillets in. Fry fillets one at a time, or two if you can manage it. Fry till golden brown and place on paper towel-lined plate.
4…Serve as soon as you’ve finished cooking all fillets.

Tips…
…Mixing the batter with cornflour yields a batter that is beautifully lighter and crispier. Try it and let me know what you think.
…Alternatively, you can use just use a total of 7 tablespoons of plain flour, omitting the cornflour.

You should have dedicated this meal to the eviction of Chris from Masterchef
My grandfather used to make the best beer battered fish in the world and he caught the fish fresh just before cooking it. His best fish to cook was the flying garnet - you know those fish that can fly for short distances over the water. YUM
I have never cooked beer battered anything but this looks good and simple - so will have to give it a shot.

Fresh fish is the best for this dish I feel. Lucky you! That fish you mention is amazing! I haven't seen one *live* though.
