Dulce de Leche Bars

I made these yesterday and they are fabulous, especially when served with your favorite ice cream. (as if you needed to add any more sugar or calories, but hey, I say go big or go home when it comes to dessert)
Ingredients:
2 pkg. sugar cookie dough (i use pillsbury brand, but any will work)
1 1/3 cups rolled oats
1 1/2 cups brown sugar
2 teaspoons vanilla
1 can sweetened condensed milk
1 pkg. caramels
1/2 c. butter
1 jar caramel topping
Directions:
Preheat oven to 350.
In a large bowl, mix 1 pkg. sugar cookie dough, 2/3 c. rolled oats, 3/4 c. brown sugar, and 1 tsp. vanilla. Press this mixture into the bottom of an ungreased 9x13" pan. Bake at 350 for 12-15 minutes or until light golden brown.
In same bowl, mix the second package dough, 2/3 c. rolled oats, 3/4 c. brown sugar and 1 tsp. vanilla. Set aside.
In a medium sized sauce pan, melt the sweetened condensed milk, the unwrapped caramels and the butter until smooth. Make sure all the caramels are melted.
When the crust is done baking, pour the caramel mixture over the top of the crust. Sprinkle the second crust mixture over the top and bake for 20-25 minutes or until light golden brown.
Cool and top with the caramel mixture. This can be served chilled or warm. I prefer warm with a side of ice cream.
My family absolutely loves these. Watch out, they are addicting.
