Yummy and Easy Pan of Protein and Carbs!

I love my carbohydrates – but in moderation of course. I love eggs too, and it’s so easy to marry the two for a delicious meal that satisfies the carb craving as well as meets the daily nutritional requirements.
Let’s warmly welcome the frittata!
It’s similar to an omelette but at the same time different. The omelette is thinner and typically folded over during the cooking process on a stovetop. The frittata is usually thicker, semi cooked on one side, then flipped over to cook through – or it can be finished off in the oven.
This is quick and easy to pull-off and so very satisfying. For an extra serve of fibre and vitamins, I served it with a side of fresh salad…and a glass of
What you need:
6 baby potatoes
1 bunch of garlic chives
4 eggs
salt to taste
pepper or chilli flakes to your liking
olive oil
The stars of this dish
1…Rinse the garlic chives thoroughly and cut into fine pieces.
2…Wash (and peel if you prefer) potatoes and slice thinly.
3…Mix sliced potatoes with some olive oil and salt.
4…Beat eggs in a separate bowl and season to your liking.
5…Heat a medium frypan with some oil. Add potatoes and chives and sauté till it reduces down, and potatoes are nicely cooked through.
6…Pour beaten eggs in. Allow to cook semi-through for a few minutes. Then, flip over and allow to cook through until almost firm.

Tips…
…If you’re not watching your calorie intake, you can add some cheese after you’ve poured in the eggs (at Step 6).
…To test if it’s cooked, insert a knife in the center of the frittata – it’s done if it comes out clean.
…An alternative for Step 6; you can finish cooking the frittata in the oven – make sure your pan is oven-proof. Cook until it is almost firm at 180 C/350 F – preheat oven first.
…You can also sprinkle some cheese on top when it’s almost done.
