Golden Triangle Treats

These golden triangles are a lovely treat for a low-fat snack or dessert. Low in fat and sugar, you won't be left with a guilty conscience when you bite into the crisp pastry with the warm ooze of the stewed apples and rhubarb meeting your lips...
What you need:
2 red apples
1 green apple
5 stalks of rhubarb
5 tablespoons of brown sugar
1 vanilla pod
1/2 teaspoon of all spice
1/2 teaspoon of dry ground ginger
1/2 teaspoon of cinnamon
1/2 cup of water
4 sheets of low-fat frozen puff pastry sheets
1 egg lightly beaten
What to do:
1…Peel and dice apples and rhubarb and place in pot.
2…Add in the rest of the ingredients – water last.
3…Bring to a boil, then reduce heat to a slow simmer. Stew for at least 30 minutes. Set aside to completely cool.
4…Thaw the puff pastry sheets – follow the instructions on the package.
5…Cut each sheet into quarters. Spoon almost a tablespoon of the stewed apples and rhubarb onto the middle of one of the squares. Fold over into a triangle and seal all sides with the egg – dip a pastry brush into the bowl of beaten egg. Twist the edges up slightly so it seals and you get a twisted edge.
6…Place all triangles on a baking sheet and brush the top with egg.
Step 5a...Cut defrosted sheet into quarters.
Step 5b...Spoon almost a tablespoon of stewed fruit onto middle of square.

Tip...
...If triangles aren't to your fancy, you can try the log shape. Per Step 5, instead of quarters, cut the defrosted pastry sheet into half. Fill the middle of the rectangle with the stewed fruit. Brush egg around the edges. Fold over and seal into a log.

Rhubarb and apple is a lovely combo...especially when stewed! < drools >... She'll like it, especially with a cuppa.
The log-shape, when sliced up, is also deliciously lovely when served with a (small) scoop of ice-cream or cremé fraiché
