A Low-fat Zingy Yoghurt Dessert

I had a couple of pears lying around – and I didn’t feel like having pears (in itself) anymore, so I decided to improvise on a basic cake mix to make it more healthy. Here’s what I came up with…
A low-fat snack for any time of the day that’s quick to do. This recipe has a lot less sugar and butter than your typical recipes and has nutritious fruit and good fibre in it. The main ingredients are pears, ginger – for a bit of zing – and yoghurt! I’ve also added almonds for an extra bit of crunch. Do also refer to the ‘tips’ section below for variations of this recipe. Enjoy!
What you need:
1 cup self-raising wholemeal flour
1/4 cup brown sugar
1/2 cup low-fat plain yoghurt
1 teaspoon baking powder
2 eggs
2 tablespoons butter
1 ripe medium pear – peel and cut into 1/4" chunks
1 ripe medium pear – pureed
4 cubes/pieces of crystallized or non-crystallized ginger – roughly chopped
(Optional) A handful of slivered almonds – toasted if you like
What to do:
1…Preheat the oven to 160/320F
2…In a large bowl, whisk the pureed pear, sugar and eggs until smooth. Then whisk in the butter and yoghurt.
3…Add in the flour, baking powder and stir until just blended
4…Add in the cubed pears, chopped ginger and slivered almonds – mix well
5…Pour into a standard-size non-stick loaf pan. Bake for 40 to 45 minutes. Insert a skewer or knife through the center – it's done when it comes out clean
Tips…
…wholemeal flour may be substituted with all-purpose flour
…instead of yoghurt, you may opt for an extra 2 tablespoons of butter and 1/4 cup of milk
…if the pears aren’t very sweet or you have a sweet tooth, use an additional 1/4 - 1/2 cup of brown sugar

The yoghurt was a bit of an experiment but it worked out well -- phew!
I might try it with bananas next time
