Hearty Soup for the Soul

September 21st 2009 00:30
Easy beef barley vegetables lentils hearty soup flu

I am so over this weather. I was blown down by the flu two weeks ago and am now still nursing a terrible cold. I’m into my fourth week of *sickness*…yes, that’s a month! I want Summer now, mama Nature…

Whining aside…
I had to get somewhat healthy enough so that I could get back to the grind. That was when I started dreaming of all kinds of soup. I made chicken vegetable soup, rice soup…and then my all time favourite, Beef Barley Vegetable Soup!

What you need:
500g of lean dice/cube beef
1/2 cup pearl barley
1/2 cup of red lentils or regular lentils
1/4 cup of mixed beans
2 carrots
2 tomatoes
4 cloves of garlic
A small knob of ginger – optional. It has properties good for alleviating the flu/cold; more on this later…
1.5 litre of vegetable stock
2 tablespoons of Worchestershire sauce
olive oil
oregano
thyme
pepper/chilli flakes

What to do:
1…Soak barley, lentils and beans in separate bowls overnight.

2…The next day, rinse 2-3 times then boil the beans (only) briskly in fresh water for at least 10 minutes.

3…Marinate meat with the Worchestershire sauce, herbs and pepper/chilli flakes. Set aside.

4…Dice the vegetables, and lightly bruise the garlic. Julienne some of the ginger and slice the rest, then likely bruise the slices.

5…Heat some oil in a pot and sauté the garlic and ginger until fragrant – it smells divine! Add lentils, barley and beans, and the vegetable stock. Add more herbs and pepper/chilli flakes if you like. Bring to a boil then lower to medium heat.

6…Allow to cook till the legumes and barley are cooked – it should take about an hour. Then add the meat and allow to slowly simmer for about another hour.

7…Salt to taste and serve =)

Serves 6-8 – great for freezing too.

A Delicious Braised Dish (edits)

Ken-Hom Chinese Technique cooking braise beef stew slow-cooker

As I prepared this dish, the five-spice powder and star anise triggered my senses and reminded me how delightfully delicious this dish is. The slow braising method of this dish will emit an aroma that will envelop your kitchen for hours till the dish is finally done. You’ll wish that it was ready sooner than the *prescribed* cooking time

What’s underneath that crown?

July 24th 2009 23:18
slow-cooker beef vegetables pie stew puff pastry crowns

Puff pastry crowns are typically made over bowls of soup. Golden brown and glistening, it entices you to dig through that pastry to get to the soup. I suppose it makes having a bowl of soup more exciting and more interesting. It’s also probably an alternative to serving bread with the soup, as you can just break up the pastry into the soup.

Crispy Chinese Pork

Crispy crackling roast porkloin chinese recipe siewyook

Having lived in Asia, I’ve been (blessedly) exposed to a variety of very good Asian food. The barbecue/roast meat dishes are among some of the food that I remember – not only for its very graphic display in restaurant-deli windows but also the aromas of the spices used in the roasting

I love my slow-cooker – as much as I love my breadmaker. It’s used regularly no matter what season it is because it’s such a fantastic feeling to have dinner ready by the time I am home.

Lara's Simple Delish Ribs

barbecue-grill-roast ribs meats cooking recipes

Great tasting tender ribs can be a difficult find or order – it can be too tough, dry or just not flavourful enough. Some renown restaurants do serve up some delectable racks but it can be really pricey, especially during this belt-tightening time – no pun intended

spicy lamb beans stew recipe

I like nothing better than an easy to cook meal that’s quick and simple to prepare and execute. It naturally has to also taste good and be wholesome which is how I’ve come up with this recipe. This recipe has the typical typical ingredients of a stew, I have however, added half a cup of mixed legumes/beans for added fibre and vitamins
