Mandarin orange lime ginger almond-meal healthy loaf breakfast


My mum enjoys baking and have had her little bake-to-order business of wholesome home baked goods for quite a few years now. I’m not an enthused baker and I experiment too much – to my detriment?


She finds security in following a recipe to a T – “because it might not come out the way it’s supposed to”. Fair enough – but I like experimenting and making it healthier. So, we’ve often had squabbles on how much sugar or butter to put.

One day, mum surprised me with a recipe that she knew would meet my expectations. A recipe called ‘orange health loaf’ – that she found somewhere. It was *perfect* – wholemeal flour, not much sugar nor butter…and it was delicious!

Here’s my adaptation (of course!) of Mum’s Orange Health Loaf.

Mandarin orange lime ginger almond-meal healthy loaf breakfast

What you need:
1/2 cup of freshly squeezed mandarin orange juice juice – regular oranges were used in the original recipe. I love the fragrance and taste of Mandarins so I wanted to try it out.

2 tablespoons of freshly squeezed lime juice – added a nice tang to the loaf; not in the original recipe.
2 tablespoons of pulp
2 teaspoons of mandarin orange zest
2 tablespoons of butter
3 tablespoons of brown sugar
1 egg
1/4 cup of milk
3 tablespoons of crystallized ginger, roughly chopped – added a nice tang to the loaf; not in the original recipe.
1 cup of (self-raising) wholemeal flour
1/4 cup almond meal
3 tablespoons of almond flakes
1/2 teaspoon of baking soda

What to do:
1…Use an electric mixer to beat the butter and sugar until pale and creamy. Add the citrus zest and pulp, and then the egg.

2…Add the flour (and the rest of the dry ingredients), milk, orange and lime juice, and chopped ginger. Mix until just combined.

3…Preheat the oven to 160/320F. Pour into cake tin and bake for 40-45 minutes or until a skewer inserted into the middle of the cake comes out clean.

4…Cool in tin for 10 minutes before turning out onto a wire rack.

5…Serve plain or with a dollop of vanilla ice-cream.

The Mandarins gave it a nice deep color -- very fragrant too! ...and a lovely soft citrus taste without being too tart.
