Leftovers ideas recipes quick easy vegetarian rice spinach


Leftovers are never wasted in our household. It’s always eaten up with gratitude especially after a busy day of work or running around. Usually it’s a quick and simple process of reheat and serve.


If you’re however feeling a bit more creative, leftovers can be the basic foundation of an exciting new dish. Here’s one of our quick and simple makeover of some leftovers – Spinach and Rice in Broth

The key ingredient is the delicious leftover sauce from this pasta dish. I usually make sure I’ve at least an extra cup of broth – cooled and frozen till I'm ready to use it.

Next, a key staple in many diets around the world, rice – doesn’t have to be *fancy* like this one. Just make sure you have enough rice for 2-4 servings – the one-cup of broth should be sufficient for 4 average servings. Rice can be either freshly cooked or leftovers.

Lastly, a bunch of greens of your choice – finely chopped.

What to do:
1…Heat saucepan and pour broth in. As soon as broth starts to simmer, stir in rice. Allow to simmer just for a few minutes; longer if you’re using leftover rice – rice should still be firm.


2…Add in finely chopped greens and cook till desired.

3…Salt to taste if necessary. I generally don’t, as there’s enough flavour from the initial dish.

There you go, quick and easy to put together and nutritious too. Enjoy!

When winter just won’t go away

Mother Nature can’t seem to decide when to truly end winter. I’m getting tired of the gusty ice-cold wind and rain. Though it has been sunny, it’s deceiving…Brr… On those days, I love a good hearty soup, and a good movie and book while I’m cosy indoors

Summer is great! The beach and cocktails, and mangoes are in season! …but really, it can get too hot to cook. There’s only so much more heat my little pad can take in.
