Monday Mumbles
A few words …and a shrug along the way…
Congee
… rice porridge – eaten in a variety of ways all over Asia
… a simple dish of rice boiled for a couple of hours in large amounts of water
… the smoother the texture of the rice porridge/congee, the better it is; like a soupy porridge – this was why Courtney, MasterChef Australia contestant was unsuccessful with her dish; watch episode here; Invention Test, Finals Week-Sunday 18 July (5/6) – fast forward to 2:30
… sometimes called rice soup – when it’s cooked in lesser amount of time and the rice grains are not as broken down
… typically just cooked with a bit of salt and served with a variety of savoury to sweet/spicy condiments
… if you prefer a one-pot wonder, meat or fish can be added towards the end of the cooking process
