Bored of having flatbread or wraps?

Not sure what to do with leftover flatbread/Lebanese bread, or just tired of having wraps? How about turning it into a quick and easy snack!


When you have some flatbread/Lebanese bread lying around, it's great as a quick snack.

It is also a good simple alternative as a pizza base, and it’s a healthier alternative to store-bought pizza base. So, for those who feel challenged to put a homemade pizza dough together or who are time-poor, a great alternative to making your own pizza dough is to head to the supermarket for some flatbread/Lebanese bread!

What you need:
Flatbread/Lebanese bread
Olive oil
Cheese – any kind will do. Shred it a little if it’s not shredded.
Tomatoes
Olives, if you have any
Tomato paste, if you have any
Anything else that you want!

What to do:
1…Pre-heat the oven to 180C/355F
2...To keep it a bit moist, spread some olive oil (and tomato paste) on the bread before putting the ingredients on top
3…Place olives and tomatoes first then the cheese – this stops the olives from getting too dry
4…Bake for about 10 mins – or till tomatoes soften a little
5…Drizzle some olive oil on top when done – this gives it a little bit more taste and *moisture*
6…Enjoy!

Tip…
…another way to use up stale flatbread/Lebanese bread – brush with olive oil (or leave as is), toast in oven for a few minutes. Then, crack it up and use as crackers with dips.

Sounds tasty Lara, I am not an advocate of sandwiches made with more than a single piece of bread and the thinner the better (bread is there to keep your fingers clean while feasting on the interior goodies), so this has great appeal to me.
