Red Lentils
… a type of pulse, and part of the legume family
… varieties span from various types of greens and browns to yellow and red – some lentils require an overnight soak and must be thoroughly cooked
… a great source of protein, especially for vegans … best source of iron from a vegan source
… red lentils turns golden when cooked and turns soft the fastest – great in soups!

Thanks Helen! It's also great in salads -- but you'd use the other varieties as they're not as soft as these (red ones).
