A Quick and Refreshing Salad

Besides using coriander as a garnish, I’ve found that a coriander and cucumber salad compliments a curry meal very well. That fresh taste and the slightly palate-cleansing effect of the coriander is a wonderful side-dish if you’re serving up a strong tasting or (any) *heavy* main dish.
What you need:
2 bunches of fresh coriander
1 cucumber
juice of 1 to 1 1/2 limes
1/2-1 tablespoon of olive oil
salt and sugar to taste
lime juice *vinaigrette*
What to do:1…Wash the coriander thoroughly and pluck off just the leaves – you can use the stems too if you don’t mind the strong taste but I’d skip using the stalk
3…Place the coriander leaves and the cucumber into a bowl
4…Whisk/mix lime juice, salt and sugar together
5…Pour the mix on the salad, add the olive oil and toss well
6…You might want to chill it a little, or you can serve as is.
Serves: 4
goes well on the side with a Main
Tips……you can roughly chop-up the coriander if you find the leaves too *large*
…for an Asian twist, use 2 teaspoons of sesame oil instead of the olive oil – this works better with Chinese-style dishes than others

This sounds great. I'll just be making a small side dish though as the boy isn't a fan of coriander. Looks deliciously refreshing.
