Bread making has come a long way. Until the 1900s, bread was only made by hand. These days, you have an array of basic and high-tech bread-makers to choose from. The five basic steps of mixing, kneading, rising, shaping and baking which usually takes about half a day and lots of energy, has now transformed into an automated one-button function which takes between three to four hours and less energy.

After speaking with several people and reading numerous reviews and forums, I decided on the Sunbeam Quantum SmartBake BM7800 based on the following key-points:
- majority of the people I spoke with had a Sunbeam breadmaker and were very happy with it, and did not hesitate to recommend as a 'buy'
- more than one person I spoke with had upgraded to another known brand BUT very quickly changed back to a Sunbeam – just like mine
- the Sunbeam ‘Quantum SmartBake’ has a separate automatic fruit and nut dispenser
- it has a power interruption program protection
- it has a 60-minute keep-warm function
- and most importantly, it has a large viewing window! Though I wish it was slightly even bigger

Although it’s a fairly big appliance, it is smaller than a microwave and lighter – but sturdy enough that it doesn’t hop around your benchtop while mixing/kneading. It also comes with a fairly comprehensive booklet with many recipes for the 12 settings that it has – recipes include gluten-free ones endorsed by the Coeliac Society of Australia.

It has been a tasty investment for sure! During the first several weeks, my little kitchen was converted into a bread lab – regularly emitting delicious wafts of bread baking throughout the apartment building.

I’ve been made more aware that baking is a precise art and science; baking with a bread-maker requires even more precision but with more ease. As such, in line with quality control, of course I had to bake till it was right... more on this later…
