Sun Dried Tomato Chicken with Feta Cheese

I love sun dried tomatoes! Oftentimes, I make my own, but to keep things easy, lets stay with the store bought kind. You can usually find these in the produce section. This recipe may sound a little complicated, but it is fairly easy and definitely delicious.
Ingredients:
5 Chicken Breasts (thawed)
1 pkg. sun dried tomatoes, chopped
1 c. feta cheese
5 Slices Mozzarella
1 c. bread crumbs
garlic salt
toothpicks
Directions:
First, pound out the chicken with a mallet until the chicken is 1/3" thin.
Sprinkle the chicken with garlic salt.
Mix the sun dried tomatoes with the feta cheese in a bowl.
Place 1 slice of the Mozzarella on the end of the chicken.
Place a scoop of the mixture on one end of the chicken and roll up. Secure with
a toothpick at the top.
Sprinkle the chicken with bread crumbs. Any flavor works, or go ahead and use unflavored and add a bit more salt.
Bake the chicken at 425, continuously rotating the chicken breasts until chicken is cooked through.
Depending on the thickness of your chicken and your oven, this can take anywhere from 20-40 minutes.
This is great with a basic salad and some carb, either rice or bread. Although sun dried tomatoes may sound a little foreign to some of your eaters, it has become one of my familiy's favorites.
