Monday Mumbles
A few words …and a shrug along the way…
Sweet Potato
… a distant relative of the potato
… and an even more distant relative of the yam
… it is however sometimes marketed as yam or sweet yam in parts of North America … it’s also known as kumara in some parts of the world
… the texture is similar to (the regular) potato but it’s sweet in taste, and the flesh is orangey in colour or purple – depending on the variety
… common methods of cooking include, frying it like chips, baking, steaming and roasting it – also great as a mash
…a great source of beta carotene (a vitamin A equivalent nutrient), and vitamins C and B6
