The tropical tamarind tree –native to Africa– is widely grown in Asia. The fruit of the tamarind tree is what makes it a staple in many Asian kitchens. It’s natural sourness and acidity makes it a beautiful (and key) ingredient in many savoury and spicy dishes.
Likened to lime, it has less sharpness than lime (or lemon), making it a beautiful match with many dishes. Substituting tamarind with lime or lemon is not quite the same – as the soft subtleties of the tamarind is what makes it unique.
Tamarind is available as dried pieces, in preserved form or as a paste, and are available at Asian grocery shops.
