How To Make It Feel Like Home

My life is in boxes. It’s a surreal feeling – is it a new start or did I leave something behind? I look around. Hmm…generous kitchen area.

The kitchen benchtop is four cupboards long and the pantry is almost like a walk-in. I should be in kitchen heaven, no? I'm still feeling of sorts. Neither the spices nor the crockery have *homes* yet. Where should it all go? It all feels kind of like when you (accidentally) put the second button into the third buttonhole…

It’s still not quite my space yet. I think about my old pantry – a beautiful organised tiered space where everything had a comfortable *home* and I could find it all with my eyes closed…

I remember how cosy my little space was. The regular smells of cooking and baking wafting from the teeny kitchen into the hallways. I could almost smell it…

A loud knock jolts me from my reverie. It's the removalist with the last box, “breadmaker and kitchen gadgets”. A knowing smile forms and I catch comforting whiffs of bread baking.

My trusty breadmaker sits patiently in a corner as I methodically measure all that I need. Home will be ready in less than four hours…

***

I bake with the Sunbeam ‘Quantum SmartBake’ breadmaker, but this recipe can also work for baking the conventional way. Recipe adapted from the Sunbeam ‘Quantum SmartBake’ bread-maker booklet, Muesli Bread.

What you need:
350ml water
1 tablespoon margarine
1 teaspoon salt
1 1/2 tablespoons brown sugar
1 tablespoon skim milk powder
2 teaspoons almond meal
1 teaspoon bread improver
240g wholemeal flour
280g plain flour
1 cup muesli – lightly toasted
35g dried fruit – if you prefer, you can put this in the fruit/nut dispenser instead of adding it to the mix

What to do:
1…Put ingredients in, in (above) order, or follow the instructions for your bread-maker booklet – particularly the order of ingredients.
2…Select the program for ‘wheat’/750g loaf.
3…Your breakfast in a loaf should be ready between 3hrs 45mins to 4 hours, depending on which crust setting you selected.

Save the Basil!

How-to-store basil leaves storing preserving freezing herbs olive-oil

I love Basil. It’s a beautiful fragrant herb and typically features in my kitchen. It’s unfortunate I don’t have a balcony, window ledge or garden to grow some – as it’s quite an expensive herb. A small-ish bunch is at least $4! I usually don’t end up using all of it and it pains me to throw it away after a couple of days – doesn’t last too long sitting in the *vase

The Way YOU Like It…

“Cooking is therapeutic.” That’s subjective isn’t it? Therapeutic for some could be stressful or mundane for others. It could also bring on certain aggressions like a power struggle – either with certain kitchen gadgets (“Shall I splatter more?”, thought the hand-blender menacingly), or with your sous-chef, kitchen hand…erm, partner.
